Chocolate Dipped Strawberries

What You’ll Need:

Directions:

Wash and air dry strawberries, set aside. Microwave chocolate on medium for 1 minute. Remove and stir well. Continue to microwave in 20 second intervals, stirring after each, until chocolate is melted. Dip strawberries in melted chocolate, setting on parchment lined cookie sheet and allow to dry. Refrigerate until ready to serve.

Peppermint Bark

What You’ll Need:

  • 1/2 cup coconut butter
  • 12 drops pure peppermint extract
  • 1 and 1/2 Tbsp pure maple syrup
  • Crushed candy canes to garnish

Directions:

Warm coconut water by submerging jar in a bowl of hot water, until it becomes a workable, paste-like texture. Mix all ingredients together in a large bowl. Spread mixture evenly onto wax paper, add candy canes to garnish and refrigerate to set. Simple, fast and delicious!

Butterscotch Pudding

What You’ll Need:

  • 2/3 cups brown sugar
  • 2 Tbsp nonfat dry milk
  • 1 and 1/2 Tbsp cornstarch
  • 1 can (12 oz)  fat-free evaporated milk
  • 1 large egg, beaten
  • 1/2 tsp pure vanilla extract
  • Optional: Whipped cream to garnish

Directions:

Whisk together sugar, dry milk and cornstarch in medium saucepan. Slowly add evaporated milk and egg, whisking constantly. Cook mixture over medium-high heat, whisking constantly, until thickened (about 5 minutes). Remove from heat and whisk in the vanilla extract. Allow to cool at room temperature and serve with a dollop of whipped cream! As an added bonus, the pudding can be stored in refrigerator for up to 3 days.

White Chocolate Blueberry Cookies

What You’ll Need:

  • 1 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 cup wheat germ
  • 1/4 tsp ground ginger
  • 1/2 tsp salt
  • 1 large egg
  • 1/3 cup canola oil
  • 3/4 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup quick oats
  • 2 ounces chopped white chocolate
  • 1/3 cup dried blueberries
  • 1/4 cup chopped crystallized ginger

Directions:

Preheat oven to 375ºF.

Whisk together flour, baking soda, wheat germ, ground ginger and salt in small bowl. Whisk egg, oil, brown sugar and vanilla in separate large bowl. Add dry ingredients to wet ingredients and combine. Add oats, chocolate, blueberries and ginger, combine.

Drop rounded tablespoons of mixture onto ungreased baking sheet at 1 and 1/2 inches apart. Bake cookies until puffed and golden around edges, about 8 to 10 minutes. Cool completely and serve.

Peppermint Patties

What You’ll Need:

  • Patties
    • 1/3 cup dried coconut chunks
    • 1/3 cup cashews
    • 1-2 Tbsp melted coconut oil
    • 2-3 Tbsp honey or maple syrup
    • 1 tsp peppermint oil
    • Pinch of salt
  • Vegan Chocolate
    • 1-2 Tbsp melted coconut oil
    • 1/3 cup cacao powder
    • 4-5 Tbsp maple syrup or agave
    • Pinch of salt
    • 1/4 tsp cinnamon
    • 1/4 tsp cayenne pepper

Directions:

Blend all ingredients from patty list together until smooth. Pat mixture into flattened ball shapes (patties) and freeze until set, about 30 minutes. Next, blend all ingredients from chocolate list together until smooth. Dip patties in chocolate mixture and allow to harden. Serve immediately or store in freezer for later!
